When designing a menu, I like to inject passion in to each and every dish I create. Being locally born and bred, the influence is clear in this menu with traditional old Lancashire dishes including home-made black pudding and of course my own personal take on the famous Lancashire Hot-Pot. My food has often been described as traditional English Fayre with a modern edge and must admit that I’m quite proud to carry this label. Lancashire has a growing band of dedicated farmers and producers using skills passed down through generations of families to produce some of the best smoked fish, bacon, hams, sausages, cheeses, ice creams and ales. As a chef, their hard work is a continuous source of inspiration and this menu of predominately locally sourced produce is a celebration of their traditions. Colin Gannon. Head Chef.
