From the outset, the concept was simple. To give our customers an experience that will celebrate everything this wonderful corner of Lancashire has to offer. We wanted to give you a real sense of what this region is all about; from its rich, industrial heritage and history, the warm Lancashire hospitality, the celebrated humour, and of course the great local produce on our doorstep. Perhaps it’s the lush green pastures and miles upon miles of undulating countryside. It could even be the mild, damp climate (some may call it rainy!), which once made this area the cotton capital of the world, yet also lends itself perfectly to nurturing the fruits from this fertile land. Or could it simply be the people and their passion for producing great food and drink. Whatever it is, it works! Think of Lancashire, and many think of Mills from the magnificent industrial age of Cotton and Textiles. Local people working as a team, carefully nurturing a high quality raw product, with the end result being something so simple, yet something to be proud of. The cotton yarns and cobbled streets have all but gone, but our principle is still firmly rooted in those bygone years which made this county famous. Now widely recognised as the most important meal of the day. We’ve got a great selection of locally sourced traditional breakfast items as well as a huge choice of fruits, cereals and pastries to ensure you get the best start in the morning. A healthy breakfast has been proven to reduce blood sugar problems, risk of diabetes and appetite cravings through the day. A cooked breakfast is undeniably good for the soul and some say, the only way to start the day. Whatever takes your fancy this morning, please help yourself to our wide selection from the buffet tables. Alternatively, please speak to a member of the team and we’d be happy to bring your choice to your table. When designing a menu, I like to inject passion in to each and every dish I create. Being locally born and bred, the influence is clear in this menu with traditional old Lancashire dishes including home-made black pudding and of course my own personal take on the famous Lancashire Hot-Pot. My food has often been described as traditional English Fayre with a modern edge and must admit that I’m quite proud to carry this label. Lancashire has a growing band of dedicated farmers and producers using skills passed down through generations of families to produce some of the best smoked fish, bacon, hams, sausages, cheeses, ice creams and ales. As a chef, their hard work is a continuous source of inspiration and this menu of predominately locally sourced produce is a celebration of their traditions. Alistair Tasker. Head Chef.
